VINADA®Coquilles + Crispy green salad

Seared scallops are elegant and delicate, with a natural sweetness that pairs wonderfully with a VINADA Charming Chardonnay. The wine’s fresh acidity and subtle oak notes complement the buttery texture of the scallops, while a refreshing green salad adds crunch and balance to the plate.

Ingredients (4 persons):

(For the scallops)

- 12 large sea scallops, patted dry

- 2 tablespoons olive oil

- 2 tablespoons unsalted butter

- 1 clove garlic, smashed

- 2 lemon wedges, for serving

(For the crispy green salad)

- 2 cups mixed baby greens (arugula, spinach, watercress)

- 1 cucumber, thinly sliced

- 1 green apple, julienned

- ½ cup sugar snap peas, halved

- 2 tablespoons toasted almonds or hazelnuts

- 2 tablespoons olive oil

- 1 tablespoon white wine vinegar (or apple cider vinegar)

- 1 teaspoon Dijon mustard

- ½ teaspoon honey

- Salt and black pepper, to taste

Steps

  1. Prepare the salad: In a small bowl, whisk olive oil, vinegar, Dijon mustard, honey, salt, and pepper to make the dressing. Toss the greens, cucumber, apple, snap peas, and nuts with the dressing just before serving.

  2. Sear the scallops: Heat a large skillet over medium-high heat. Add olive oil and butter. Once hot, add garlic clove (for flavor) and place scallops in the pan without overcrowding. Sear for 1½–2 minutes per side until golden brown with a caramelized crust. Season with salt and pepper.

  3. Serve: Arrange the crispy green salad on plates, top with seared scallops, and serve with lemon wedges on the side. Enjoy alongside a chilled alcohol-free Chardonnay.
